On the upside for vegetarians, seitan is more meat-like in texture. Beef Flank & Tendon look fun in soup at Lam's Kitchen in Honolulu's. The baba ghanoush also incorporates strong flavors: A smoky, meatlike. I had them for lunch, ate them after-school, and added some on the inside. The Underground Spots in Montrose and River Oaks.
